What does old mine cut mean?

It's an early style of faceting used before the twentieth century. These stones feature a high crown and a visible flat facet at the bottom called a culet. They were cut by hand to sparkle under candlelight.

I have this heavy marble table top with lots of different coloured shapes inlaid into it, how do I clean the surface without ruining the polish?
