Can I change the seat fabric myself?

Drop-in seats are simple enough to tackle at home. You just need a screwdriver to pop the frame out, some fresh calico, and a staple gun for the new top cover. Overstuffed seats are much harder. The fabric is tacked directly into the structural rails. If you pull out old tacks badly, you risk splitting the mahogany frame. Leave those to an upholsterer.

My dining room floor is quite uneven and one of the chairs wobbles a lot when someone sits on it, so is there a way to fix the legs?

The chair might not be the problem. Try moving it to a flat surface like a kitchen counter or a sheet of ply. If it sits flat there, your floor is the culprit. If the chair frame is actually twisted, a restorer can often correct it. They knock the joints apart, clean off the dried animal glue, and clamp the frame square again on a level bench.

How do you clean the carved wood?

A soft bristle brush takes care of the dust trapped in the back rail carvings. You can use a clean shoe brush, provided it has never seen polish. Give the timber a light wax once a year. Apply a plain beeswax with a cloth, let it sit for ten minutes, and buff it off. Avoid aerosol sprays as they leave a sticky silicone residue on the surface.

I have inherited a set of six and want to use them every day for family meals, but I am worried the old joints might not hold up to teenagers tipping back on them.

Mid-Victorian dining chairs were built for heavy domestic use. The glued and doweled joints are robust enough for daily family meals. They have already survived over a century of dining. However, tipping backwards puts immense strain on the rear leg joints. No wooden chair takes that kind of leverage well. If the back joints do start to creak, a cabinet maker can easily tighten them up.
