Can I paint an old pine cupboard?

You certainly can. Pine pieces usually wore thick paint when new, hiding the cheap grain from view. Stripping them only became a modern trend. Applying a fresh coat of traditional paint restores the intended historical finish.

We are trying to fit one of these into an awkward alcove, but the cornice sticks out too far on the sides. Can we trim it down?

Modifying the cornice changes the proportions of the piece. The overhanging top moulding balances the visual weight of the base. Cutting the sides flush leaves the cupboard looking top-heavy and unfinished. Finding a narrower piece built for a tight space leaves the intact survivor alone.

How do I fix a sticking door?

Seasonal damp makes wooden doors swell and bind against the frame. Don't reach for the sandpaper straight away. The problem often cures itself when the central heating comes on and humidity drops. If the timber rubs all year, try running a candle along the tight edge. The wax leaves a thin layer of dry lubrication that helps the door glide shut without damaging the finish. Look closely at the ironwork too. Loose screws will let a heavy door sag out of square, which you'll solve with a screwdriver.

The shelves inside this dark oak cupboard sag quite a bit in the middle when I put heavy stacks of plates on them. Is there a way to reinforce them?

Oak shelves bow under sustained weight over decades. You don't need to replace them. Cut a simple wooden batten to run along the underside of the shelf. Rest this support on small blocks fixed to the backboard to transfer the weight.
