This is a lovely looking Pan, the pan was obviously a very treasured piece, it has original Brass handles with robust copper riveting.

A pan of this type would have been used in jam making, for dairy creaming and pickling.

The Pan is in remarkably good condition for its age and has a charming patina

Copper jam pans were widely used in 19th-century domestic and commercial kitchens for boiling fruit and sugar to make preserves. The wide, flared rim allowed steam to evaporate rapidly, which reduced cooking times and preserved the natural flavour and colour of the fruit.

Unlined copper was chosen because it conducts heat with exceptional uniformity, preventing hot spots and scorching during sugar reduction. Additionally, traces of copper ions released during heating react naturally with fruit acid and sugar, aiding in the gelling process.

Authentic pieces typically feature heavy-gauge copper construction, hand-riveted handles made of bronze, brass, or wrought iron, and slight irregularities from hand hammering. Dovetailed seam joints or raised copper construction on the base also indicate period hand manufacture.
