How were they normally used?

Long stools served multiple roles depending on the room. In dining parlours before the eighteenth century, they offered communal seating along one side of a long table. Later, upholstered versions sat in window bays or formal drawing rooms. They gave guests somewhere to perch without disrupting the line of sight across a crowded space.

Can they take modern fabrics?

Most frames accommodate contemporary upholstery fabrics without any structural issues. Traditional upholsterers will build up the base with webbing and hair before applying your modern top cover.

We have an empty hallway and I was thinking about putting a long seat there, but are they comfortable enough for sitting on to put shoes on?

A long stool works well in a hallway for exactly this purpose. The seat height is usually identical to a standard dining chair, giving good leverage when bending down. Solid oak seats are firm but practical for brief tasks. If you want more comfort, look for a piece with a drop-in seat or a stuffed-over frame.

I have uneven flagstone floors in my period cottage and I worry about the longer frames wobbling, so do they handle bumpy surfaces well?

Six legs distribute the weight better than four on uneven surfaces. This design prevents the middle of the frame from dipping when placed on bumpy floors. If your flagstones are very irregular, look for examples with thicker oak stretchers. These lower frames have the inherent strength to cope with twisting forces when someone sits down. You can always add felt pads under specific feet to level the piece. This protects both the floor and the timber joints.
