Preserve pans were engineered specifically for boiling fruit and sugar to make jams and jellies. The wide, shallow structure allows rapid evaporation, while copper offers high thermal conductivity for even temperature control.

Pans from this period were typically hand-hammered from heavy-gauge copper sheet metal, featuring rolled rims for structural stability and cast copper or brass handles attached with heavy iron or copper rivets.

Authentic pieces exhibit hand-riveted handles, dovetail or cramped seams near the base, irregular hammer marks from hand-forging, and significant weight compared to modern machine-stamped reproductions.
