How heavy is a typical carved sideboard?

Most of these are substantial pieces of furniture. A large oak example easily requires two strong people to move the base section alone. The mirrored backs add significant weight. You separate them for transport, but the carcase itself remains a heavy load.

I have a small dining room with low ceilings, so will a large Victorian carved sideboard overwhelm the space or block the light?

A tall backboard can dominate a low room. Many buyers choose to leave the mirrored top off entirely and just use the base as a serving surface. Without the top, the piece acts more like a large chest of drawers. It offers the same storage without crowding your sightlines. You simply store the backboard safely elsewhere.

Can you adjust the internal wooden shelves?

Most internal shelves sit on fixed wooden cleats. They stay where the cabinetmaker nailed them. Some later pieces use adjustable metal pegs inside the cupboards.

We want to store heavy dinner plates in the cupboards, but we aren't sure if the old drawer bases can take the constant weight?

The cupboards handle heavy stacks of ceramics without issue. The solid bottom boards rest directly on the base framing. Drawers are a different matter. Pine drawer bottoms tend to split or sag if you overload them with dense stacks of plates. Keep the plates in the cupboards and use the drawers for table linens. If a drawer bottom has already bowed, a restorer can slide a new timber panel into the original grooves.
