Do the curved drawers stick more than flat ones?

The curved shape itself doesn't cause the drawers to stick more often. Friction depends mostly on the condition of the internal runners and the structural squareness of the carcase. When the base gets damp or the joints loosen, the carcase can sag. This settling forces the drawers out of alignment, making them difficult to push in regardless of their front profile.

I have inherited one with wooden handles but most of the ones I see online seem to have brass plates, so did someone change them later?

Cabinetmakers fitted both styles depending on the decade they were working in. Earlier Georgian chests usually featured brass plate handles or simple brass rings. Victorian makers shifted towards turned wooden knob handles as they became fashionable. Sometimes a later owner updated an early chest with wooden knobs to match changing tastes, but many original wooden handles survive on nineteenth-century pieces.

How heavy are these chests usually?

Most require two strong people to move comfortably. The solid pine carcase and thick mahogany face add considerable weight. Removing the drawers lightens the load significantly before attempting to lift the main frame.

My bedroom has quite uneven floorboards and I am worried that an old chest of drawers like this will wobble around and get damaged when I use it.

Uneven floors affect all rigid furniture, but you can manage it easily. Placing a small wooden shim under one or two feet usually stops the rocking. Leaving a heavy chest on an uneven surface without support will eventually strain the carcase joints. Once the frame twists, the internal drawer runners fall out of alignment. Taking time to level the feet properly protects the joints and keeps the drawers sliding smoothly.
