What is a bachelor chest?

A bachelor chest is a specific type of small chest of drawers. They are low, compact pieces that originally featured a folding top. You open the top and it rests on pull-out lopers to form a flat surface. They were designed for small apartments or lodgings. The fold-over top provided a temporary desk or dressing area without taking up permanent floor space.

My grandmother left me this heavy wooden piece that has a brushing slide that pulls out above the top drawer. What was that flat board actually used for back in the day?

That flat pull-out board is called a brushing slide. Servants used it to brush down the owner's tailored clothes before putting them away. The slide keeps the dust off the polished top surface of the chest itself. You find them most often on mid-century Georgian examples. They are a practical addition that modern owners sometimes use as a temporary shelf for folding laundry.

How deep are standard drawers?

There is no single standard depth. The bottom drawers usually hold bulkier items and run deeper than those at the top. They typically start around five inches deep and finish closer to ten.

Sometimes I see chests where the top hangs right over the edges of the base by a couple of inches. Is there a specific name or reason for that overhang?

That overhang is typical of a piece with a boarded top. Earlier provincial joiners simply nailed a wide, flat board directly onto the top of the carcase frame. The overhang protects the drawer fronts from spills and knocks. It also allowed the chest to sit flush against a wall in older homes. Skirting boards used to project quite far into the room, so this design bridged the gap.
