The tufts of wool on the sides of the sofreh were inserted, I suspect, for symbolising good luck.
Dining sofrehs were used like a western tablecloth, spread on the tent floor at mealtimes or when entertaining important guests, and bowls of food, bread and tea placed on the sofreh. The tribespeople would then sit around the sofreh and eat.
In todays modern home, this sofreh might be used as a hall runner with an effective underlay.
